Pork loin is one of the most celebrated dishes enjoyed in the Christmas season for its attractive presentation and delicious flavor. Not only that, but it can be stuffed with a thousand different kinds of filling and it’s a perfect meal option when you have a lot of guests to feed. Today I’m sharing a pork loin drizzled with a grape sauce that is so delicious, it will have you and those you’ve invited licking their fingers. The stuffing is also ridiculously flavorful, packed with chorizo, cilantro and olives. Without a doubt, this dish will be enjoyed at important celebrations and surely it will make you look like a queen when it comes time to bring it to the table. Enjoy!

Ingredients

  • 1 pork loin
  • Salt and pepper, to taste
  • 4 chorizos
  • 1/3 cup Kalamata olives, sliced
  • 1 egg yolk
  • 2 tablespoons bread crumbs
  • 1/3 cup chopped cilantro or parsley
  • 2 bacon slices
  • 1 teaspoon olive oil
  • 1 cup red, seedless grapes
  • 1/4 cup red wine
  • 3/4 cup chicken broth

Directions

    Preheat the oven to 375°F.

    Slice the loin in half to stuff it.

    Season both sides with salt and pepper. Set aside.

    Remove the skin from the chorizos and put the ground chorizo in a large cup.

    Add the sliced olives, egg yolk, bread crumbs and chopped herbs.

    Use your hands to mix all the ingredients before stuffing the loin with this filling.

    Close the loin, wrapping up with kitchen twine or aluminum foil to keep the loin sealed for cooking.

    Bake for 40 minutes.

    If you wrapped the loin in aluminum foil, open up after the first 20 minutes and switch the oven setting to broil, broiling an additional 20 minutes until pork is golden brown.

    While in the oven, prepare the grape sauce in a frying pan. Cook the bacon, diced, with the olive oil.

    Add the grapes and let fry until they begin to burst open.

    Add the wine and chicken broth. Stir constantly until half the liquid has reduced down and the sauce has thickened.

    Cut the loin in slices and arrange on a serving tray before drizzling with the grape sauce. Enjoy!

    For a thicker sauce, add some flour when incorporating the wine and broth. Stir constantly to prevent lumps from forming.
