Strawberry Cream with Rum

I can never resist purchasing strawberries when they’re in season. Each time I see them in the supermarket I end up coming home with one or two baskets. I freeze some for my smoothies and others I use the same day in desserts, like this one that can be made in just a few minutes and doesn’t require too much effort. It’s very easy to make and doesn’t require too much time in the kitchen.

Ingredients

  • 1 pint heavy cream
  • 4 tablespoons brown sugar, divided
  • 1 tablespoon vanilla
  • 1 lb fresh strawberries, cut into pieces or thinly sliced
  • 1/4 cup orange juice
  • 2 tablespoons unsalted butter
  • 2 tablespoons golden rum

Directions

    Before preparing the cream in the metal mixing bowl, leave the bowl in the freezer for 15-20 minutes.

    After that time, add the cream, whip for 1 minute, add the sugar and vanilla and continue whipping for 3 or 4 minutes, until it looks like snow. Remove and move to a sealed container (so it doesn’t absorb the smells in the refrigerator) until you’re ready to serve.

    To prepare the strawberries, melt the butter in a pan at medium heat, add the strawberries, sauté a few seconds, add the sugar, orange juice, keep mixing and add the rum. Let thicken and allow the liquor to evaporate, remember to stir occasionally.

    You can serve hot with the cream or let cool.
