Ingredients

  • 1 1/2 cups sugar
  • 1/2 stick butter, softened
  • 8 ozs cream cheese, softened
  • 2 cups flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup diced dried strawberries

Directions

    Pre-heat oven to 350°F.

    Mix sugar, butter, and cream cheese until light and fluffy, for about 5 minutes.

    In a bowl whisk together flour, baking powder, baking soda, and salt. Set aside.

    Add eggs, milk, and vanilla. Mix until well blended.

    Slowly add flour mixture and mix until combined. Fold in dried strawberries. Pour mixture in muffin molds.

    Bake until light and golden, for about 20-25 minutes. Cool in pan for 10 minutes, remove from pan and cool completely.
