Steamed Baby Broccoli with Jalapeño Ginger Miso

To avoid home meal boredom, I like to dedicate one night a week to Asian cooking. Because I like to keep my family enthusiastic about home-cooked meals, I experiment with a variety of flavors, ingredients and spices. One of my favorites is miso paste. Because miso has such a unique flavor, it's a perfect addition to any broth, sauce or Asian stew. This simple recipe is an example of how miso can elevate the much-dreaded broccoli to a coveted side dish in just under 20 minutes.

Ingredients

  • 1/2 lb baby broccoli (or broccolini), rinsed and ends trimmed
  • 1 tablespoon miso paste
  • 2 tablespoons water
  • 1 tablespoon grape-seed oil
  • 1 teaspoon fresh ginger root, finely chopped
  • 1 clove garlic, finely chopped
  • 1 jalapeño, sliced in rounds
  • 1 teaspoon soy sauce
  • 1/4 teaspoon roasted sesame oil

Directions

    In a large pan, add 1 cup water and bring to a simmer over medium heat.

    Arrange the baby broccoli in the pan and steam for approximately 3-5 minutes. Do not over-steam. The baby broccoli should be darker in color but slightly tender.

    Remove from heat and discard water.

    In a small bowl, combine the miso paste and 2 tablespoons water. Stir until the miso has completely dissolved.

    Wipe pan dry with a paper towel. Return pan to stove and add grape-seed oil, ginger root, garlic and jalapeño, and cook for 3 minutes over medium heat.

    Stir in the miso water, soy sauce and sesame oil. Cook for 1 minute more.

    To serve, place steamed baby broccoli on a serving plate and top with miso sauce.
