Spinach Soup with Yogurt

With the arrival of cold weather, we change many of our eating habits and preferences. Once the month of December gets underway, we often forget the light and fresh dishes of the summer and feast on hot and more elaborated options. And now that it’s getting colder and colder, we crave a delicious hot soup more than ever. I have come to realize that, using a blender and the ingredients we choose or already have at home, we can prepare a delicious and nutritious soup with our favorite foods and a yogurt base. Today I want to share the recipe for my creamy spinach soup in a yogurt base. My little ones love it and it’s an excellent option that’s both colorful and nutritious. It can also be the perfect starter for a dinner with family or friends. So try it and please your family! As I’ve mentioned before, don’t forget my favorite phrase: The power is in the flavor!

Ingredients

  • 4 cups chopped spinach
  • 2 cups whole milk
  • 1/2 cup natural yogurt
  • 2 diced, white potatoes
  • 2 chopped leeks
  • 2 tablespoons chopped cilantro
  • 2 teaspoons canola oil
  • 2 to 3 cups water
  • Salt and pepper to taste

Directions

    Heat two teaspoons of oil in a medium pot over medium to medium high heat. Stir in chopped leeks and stir until soft and translucent.

    Add two cups of water with the potatoes and salt to taste. Once it breaks into a boil, lower to low heat and cook for another 10 minutes.

    Add the spinach and stir constantly for two or three minutes. Let it cool. Place all in blender and blend for four minutes. Bring all previous ingredients back to cooking pot, immediately; stir in two cups of milk and let boil for another 3 minutes.

    Lastly and just before serving, add yogurt and blend very well or the soup may lose its creaminess. Serve hot.
