Spinach and Artichoke Strata

You're probably sitting there asking yourself, "What on earth is a strata?" To put it simply, it's an easily prepared dish that is perfect for your Three King's brunch. It’s like a giant sandwich, shaped as bread pudding, that is baked at the last minute and generally served for breakfast on special holidays like this one. All the work should be done the night before. Prepare your ingredients and build the strata, which you should then refrigerate overnight. The next day all you have to do is take it out and bake for approximately one hour. You can prepare and bake it on the same day, but letting it sit overnight will give it a very special texture. This is a very versatile dish that allows to you to use any ingredients you like. You can opt for a completely vegetarian version or add bacon, ham, chorizo, chicken, and so on. I have used fresh artichoke hearts, but you can also use frozen or canned heart, which will save you time. The same goes for the spinach: you can use either fresh or frozen. Ingredients

  • 8 artichoke hearts
  • Salt and pepper
  • 1 lemon wedge
  • 2 tablespoons vegetable oil
  • 2 garlic cloves, mashed
  • 1/2 cup of onion, chopped
  • 2 cups of spinach, washed
  • 4 eggs
  • 2 cups of milk
  • 1/4 teaspoon ground nutmeg
  • 8 slices of day old bread
  • 1/2 cup grated Fontina cheese
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon butter, cut into pieces

Directions

    Cook the artichokes in water with salt, pepper, and a lemon wedge until they’re tender enough to pierced with the tip of a knife (approximately 20 minutes). Allow to cool and dice.

    Heat the vegetable oil in a saucepan over medium heat, and sauté the garlic and onions. Add the spinach and stir a little, cooking until it withers but make sure it doesn’t dry up. Season with salt and pepper and add the artichokes. Mix well and set aside.

    Combine the eggs, milk, nutmeg, salt and pepper in a bowl.

    Have a baking mold ready. Grease the mold and place half of the slices of bread.

    Pour in the artichoke and spinach mixture, as well as the Fontina cheese. Cover with the rest of the bread.

    Pour the egg and milk mixture over everything. Cover with aluminum foil and refrigerate overnight.

    Preheat the oven to 375°F.

    Remove the mold from the refrigerator and sprinkle with parmesan cheese and the butter.

    Bake for one hour or until the strata looks golden brown and becomes swollen like a soufflé.

    Remove from the oven and let sit for 5 minutes before cutting. Be sure to account for shrinkage once it cools.

    Serve immediately with a green salad on the side.

    You can use mushrooms or asparagus instead of artichokes.

    Add ham in between layers.

    Make a tomato sauce and use it when you’re adding layers of bread and veggies as if you were making lasagna.
