Spicy Fried Plantains

Using plantains to replace French fries is a brilliant idea. The consistency of green plantains is very similar to that of a potato, and when you fry them in hot oil, they brown very easily and the taste is very similar. A few days ago, I made them for my kids and they didn't even notice that I used plantains. Serve them just as you would French fries, with ketchup, salsa or salt. This time I wanted a bit of heat so I sprinkled them with chili powder, paprika and salt. Delicious!

Ingredients

  • 1/2 cup vegetable oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon paprika powder
  • 1/2 teaspoon chili powder
  • 2 green plantains, peeled and cut into long pieces (like French fries)

Directions

    In a 10-in frying pan, heat vegetable oil on medium-high heat.

    Mix the salt, paprika and chili powder, set aside.

    Carefully, submerge a batch of plantain strips in the oil, be careful to not leave them stacked on top of one another. Fry for a few seconds until golden. Then, carefully flip them.

    Once they are golden brown on all sides, remove them from the oil and place them on a plate lined with paper towels to remove the excess oil. Immediately sprinkle them with the mixture of chili powder and salt.

    Repeat with the remaining batch of plantain strips.

    Serve immediately.

Expert Tips

  • tip 1
    The easiest way to peel a plantain is to cut it in half, then carefully cut a line laterally with the knife. Use your hands to remove the peel.

    Make sure to use a green plantain with no more than a few dark spots, but the greener the better.
