When we work away from home, time and money constraints often force us to eat the first thing that lands on our plates. It would be ideal to prepare food the night before and not end up eating something that might not be very good for you. Planning a weekly menu helps a lot and one of the dishes I recommend including once in a while is this delicious Spanish omelet. The recipe is simple and doesn’t require too much of your time, has just a few ingredients, amazing flavor and it’s pretty economical. Some like to add thin slices of onion, chorizo, vegetables and a garlic clove. The combinations vary depending on the person. It’s definitely worth a try!

Ingredients

  • 3 large potatoes or 6 small potatoes
  • 3 tablespoons of olive oil
  • 4 eggs
  • Salt to taste
  • Sliced onion (optional)

Directions

    Peel the potatoes. Wash and dry them thoroughly.

    Cut into thin strips and lightly fry in hot oil.

    Whip the eggs, add a bit of salt and mix them with the freshly fried potatoes.

    Remove a little bit of oil from the pan and leave enough so the omelet doesn’t stick.

    Add the egg and potato mixture to the pan and if you want to add onions or other ingredients, now would be the time.

    Shake the pan from time to time to make sure the ingredients don’t stick.

    Cover and let cook on low heat until it becomes firm.

    To turn the tortilla so it browns on both sides, use a plate or lid that’s big enough.

    Cut into cubes or triangles like a slice of cake.

    You can eat the Spanish omelet hot or cold. It’s also a wonderful snack at parties if you cut into cubes and insert toothpicks.
