If you’re looking for hors d'oeuvres that are easy to make, I’ll leave you with this delicious recipe that uses smoked pork as the main ingredient. This meat is not only flavorful, but it can be purchased pre-cooked in the supermarket, which makes any dish more practical and quick to prepare. I use wanton wrappers, but you can also prepare this recipe using spring roll shells or pastry. Years ago I discovered that if I stretch the wonton wraps using my pasta machine I am left with thinner and squarer dough; this makes prepping the rolls much easier. Plus, they come out crispy when served hot and fresh. I suggest using this recipe as a reference. Incorporate the vegetables you like most, such as celery, leeks, etc. to give the rolls a personal touch. Vary the sauces to your taste so that when you serve the rolls, you will have a banquet of different flavors that everyone will want to dip into and try. Sometimes I use chicken or shrimp in the filling, but if I want a recipe with smoked bacon, I go with lightly sautéed, smoked pork instead. However you choose to prepare them, these rolls are exquisite.

Ingredients

For the filling:

  • 2 tablespoons vegetable oil
  • 2 teaspoons grated ginger
  • 1 teaspoon bell pepper, finely cubed (optional)
  • 1 teaspoon chopped garlic
  • 1/3 cup carrot, finely grated
  • 1/3 cup scallions, chopped
  • 1/3 cup red pepper, julienned
  • 6 oz smoked pork, cut into small cubes
  • 1 tablespoon soy sauce

For assembly:

  • Wonton wrappers
  • 1/2 cup vegetable oil

To serve:

  • Hoisin sauce
  • Cayenne pepper

    For the filling: Heat oil in a frying pan over medium heat. Fry the ginger, bell pepper (optional) and garlic until bland and fragrant.

    Incorporate the carrot, scallions and julienned red pepper, stirring well. Finally, add the smoked pork and soy sauce. Let the flavors combine and taste to check the seasoning. You can add more soy sauce. Remove from heat and let cool.

    For assembly: Stretch each wonton wrap using either a rolling pin or pasta machine. Dampen the edges of the wrap with a little bit of water. Put one tablespoon of the filling on the edge of one of the wonton wraps and roll up the wrap, pressing down the edges of the dough to seal.

    Heat the 1/2 cup of oil in a frying pan and fry the rolls slowly, turning them over to evenly brown. Once browned, transfer to a plate with paper towel to absorb the grease.

    To serve: Serve while still warm with the Hoisin sauce, cayenne pepper or any other sauce of your preference.
