Scrambled Egg and Cheese Burritos

When my oldest daughter left home to live on her own, one of my biggest worries was if she was eating well. So I started making 6-8 breakfast burritos, which I froze to send to her. This was an easy way for her to start the day with a rica meal. The only thing she had to do was heat the burritos in the microwave, and go! This is ideal for people that don’t have time to cook every day. Try this recipe and enjoy!

Ingredients

  • 1 tablespoon corn or canola oil
  • 1 tablespoon butter
  • 1 cup onion, finely diced
  • 1/2 cup green onion, chopped
  • 1 cup tomatoes, finely diced
  • 8 eggs
  • Salt and pepper, to taste
  • 4 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 2 cups cheddar cheese, shredded

Directions

    In a large frying pan, heat the oil and butter. Once the butter has melted, add both kinds of onion and sauté for 2-3 minutes, or until the onion is transparent. Add the tomato, mix with the onion, and sauté for 2 additional minutes.

    Crack the eggs into a big bowl and beat together. Add salt and pepper, to taste.

    Add the beaten eggs to the sauté and mix well. Scramble the eggs, stirring constantly for 5-7 minutes or until the eggs are completely cooked.

    Portion out the scrambled eggs evenly among the 4 tortillas. Add 1/2 cup of the shredded cheese on top of each burrito.

    Fold down the upper half of each tortilla, then the two sides and continue wrapping up the tortilla until the burrito is formed.

    Serve burritos immediately or freeze to eat the next day.

    To freeze the burritos, individually wrap them in plastic wrap before storing in the freezer.
  • tip 2
    To reheat the burritos, remove plastic wrap, wrap the burrito in a damp paper towel and heat in the microwave for 1 1/2-2 minutes.
