Savory Muffins with Bacon, Cheese and Scallions

Spec-ta-cu-lar! That’s what these little muffins are. They’re great for a brunch or as appetizers for dinner parties. They’re easy to make, giving you endless options, both sweet and savory. Today, I’m going to tell you about the savory version, which is basically prepared just like the sweet one, except you use some salt instead of sugar. Enjoy!

Ingredients

  • Oil spray
  • 2 eggs
  • 1 cup coconut milk
  • 1/4 cup vegetable oil
  • 2 cups self-rising flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Cheddar cheese
  • 3 scallions, finely chopped
  • 1/2 cup bacon (real bacon bits)

Directions

    Preheat the oven to 350°F.

    Lightly spray a 12-cup muffin or cupcake pan with oil.

    In a mixing bowl, lightly beat the eggs with a hand mixer. Add the coconut milk and oil, and keep beating until everything is well combined.

    Sift the flour, the salt and the pepper.

    Slowly add the dry ingredients into the liquid mixture and whisk with an electric mixer until you have a homogeneous mixture.

    Add the grated cheeses, finely chopped scallions and bacon. Whisk until all the ingredients are well incorporated.

    Use a 1/4 measuring cup to fill the muffin pans.

    Sprinkle with pieces of scallions and bacon bits.

    Bake for 25 minutes or until golden brown and firm to the touch.

    Let them cool for 5 minutes before unmolding. Serve nice and hot.

    Other filling options may include: cooked ham, cut into small cubes, salami, chorizo and smoked salmon. You may also use the cheese of your choice.
