Ingredients

  • 1 tablespoon oil
  • 1 clove garlic, minced
  • 2 cups rice
  • 1/2 cup of red beans
  • 1/2 cup Muir Glen™ organic tomato sauce
  • 1 cup beef cubes (optional)
  • 4 cups water
  • 1 pinch of turmeric
  • Salt to taste
  • 1 ripe plantain

Directions

    If you're going to add meat to this dish, add oil to a pot and brown the meat with the garlic.

    Now add the rice, beans, tomato sauce and finally, the water. Season with turmeric and salt.

    Cover the pot and let the rice cook at low heat.

    In the meantime, peel the plantain and cut into small cubes.

    Sauté the pieces of plantain until they've nice and tender. Remove from the oil and use paper towels to absorb the excess oil.

    Once the rice is ready, add the plantains and mix well.

    Serve immediately.

    You can use black beans instead of red.

    To add an extra Latin touch, add finely chopped cilantro just before serving.
