A crumbly sweet apple rhubarb crisp is wonderful as a brunch treat or perfect for an after-dinner dessert. Bake it in the morning and enjoy it any time of day.

Ingredients

  • 4 cups diced apples
  • 3 cups diced rhubarb
  • 1 teaspoon vanilla extract
  • 3 tablespoons flour
  • 2 tablespoons sugar
  • 1 cup flour
  • 1 cup brown sugar
  • 1/2 cup old fashioned oats
  • 1 teaspoon ground cinnamon
  • 6 tablespoons butter, at room temperature
  • 1/2 cup chopped pecans

Directions

    Preheat oven to 350° F.

    Liberally spray an 8 x 8 inch baking dish with nonstick cooking spray.

    In bowl, toss together diced apples, diced rhubarb and vanilla extract. Add flour and sugar, stir to coat. Once all fruit is coated, spoon fruit mixture into prepared baking dish and wipe bowl clean.

    In the same bowl, add flour, brown sugar, oats, ground cinnamon and butter. With a pastry cutter or two forks cut butter into the mixture until crumbly; mix in pecans.

    Evenly sprinkle topping over fruit.

    Bake for 35 to 40 minutes, fruit should be tender when pierced with a toothpick or knife.

    Remove from oven, allow to cool for 30 minutes and serve with ice cream.
