Pumpkin Buñuelos

Whenever I prepare these pumpkin buñuelitos, I'm transported back to my childhood. In those days there was a plot of land alongside my house owned by titi Paulita, as she was known in my neighborhood. She was the one who taught me this recipe, as I showed an early interest in cooking-I would often accompany her in washing and peeling the day's vegetables. Later on as an adult, preparing buñuelitos with Paulita I mustered up the courage to ask for her secret recipe. This same recipe can be prepared in a tortilla-like shape (instead of the round type,) but are called barriguitas de vieja or pumpkin fritters. I hope you have a chance to prepare this wonderful treat with your own family; if you haven't started a family recipe book yet, take advantage of the moment to start one now- this is a precious gift that your children will come to cherish as they grow up.

Ingredients

  • 2 cups pumpkin
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla
  • 1 tablespoon baking powder
  • 1 cup sugar
  • 1 1/2 cups all-purpose flour
  • Pinch of salt
  • Oil, for frying

Directions

    First cook the pumpkin well, then let thoroughly drain and cool-off in a large strainer for around 30 minutes. When cool, mash with a fork or potato masher.

    In a large bowl or food processor, combine the mashed pumpkin with the sugar, eggs, cinnamon, vanilla, salt and flour. Mix until completely blended.

    Pre-heat the oil in a frying pan over medium heat. When hot, fry small spoon-sized portions of dough until golden brown on all sides.

    Individually remove the buñelitos as they finish cooking and let dry over a paper towel. Dust with powdered sugar or brown sugar and serve lukewarm.

Expert Tips

  • tip 1
    When ready to fry the buñuelos, make sure the oil is hot-but not over high heat. If the dough cooks too fast it can burn easily.
  • tip 2
    If you don't have pumpkin readily available, try using butternut squash as a substitute.
