This mixture of spices is the perfect way to season chicken or red meat to be grilled, fried or roasted. You can also use it to season tofu. One of the perks of preparing it at home is that you can avoid using artificial additives. This is where we get the famous Boricua taste in our lechón and pavochón.

Ingredients

  • 1 tablespoon garlic powder (not garlic salt)
  • 1 tablespoon ground coriander
  • 1 tablespoon oregano
  • 1 tablespoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 annatto
  • 1 teaspoon paprika
  • Sea salt, to taste

Directions

    Mix the ingredients together, taste and adjust if necessary.

    Keep in a jar or sealed container.

Expert Tips

    You can also add onion powder or a little ground ají if you like it spicy.

    You can use mashed fresh garlic with a bit of olive oil instead of garlic powder.

    This mixture is perfect for seasoning pernil.
