Pork Loin with Hibiscus and Chipotle Sauce

Ingredients

  • 1 lb pork loin
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1/4 cup dried hibiscus flower (ground)
  • 1/2 cup hibiscus flower tea, concentrated
  • 1 cup ketchup
  • 3 tablespoons brown sugar
  • 2 teaspoons white vinegar
  • 2 chipotle peppers (in adobo sauce), puréed

Directions

    To prepare the meat sazón, mix the ground hibiscus with the salt, pepper, cumin, and garlic. Rub the meat with a little olive oil and add the sazón until the filet is completely covered. Store the seasoned meat in a sealed plastic container and refrigerate for 15-20 minutes to let the spices soak in and enhance the flavor of the meat.

    To prepare the barbeque sauce, combine the hibiscus tea, ketchup, sugar, vinegar, and chipotle pepper purée in a small pot and cook for 10-15 minutes, or until the sauce thickens a little. Salt can be added to taste.

    To cook the meat, turn on your grill and wait until the heat reaches 400°F. I like to cook pork fdirectly over the flame for five minutes on each side. Afterwards, I move the meat to an area with less heat on the grill until it is finished cooking. When the filet reaches an internal temperature of 145°F, it’s ready. Remove from heat and let the meat sit for a few minutes before cutting to preserve the juices. To serve, cut into portions and dress with the barbeque sauce.

    Prepare the hibiscus tea like any other infusion; add dry flowers to a cup and soak in hot water until deep red in color. To make concentrated tea, you only need 1/2 cup of boiling water. The remaining cooked flowers can be ground and used in the barbeque sauce as well if you wish.
