Plantain Pancakes with Mango Sauce

Plantain pancakes are an excellent option if you’re looking for a different kind of breakfast. They look and have the same consistency of a traditional pancake but the taste is very different. Plantains have a very characteristic taste, and adding a sweet and tangy fresh mango sauce makes for a great combination. Try them and let us know what you think.

Ingredients

For the pancakes

  • 3 ripe plantains, peeled and cut into thick slices
  • 4 eggs
  • 1/8 teaspoon salt
  • 3 tablespoons vegetable oil
  • 2 tablespoons vanilla extract
  • 6 tablespoons Bisquick™ Original pancake and baking mix
  • Butter, to taste

For the mango sauce

  • 2 ripe mangoes, peeled and cut into large pieces
  • 2 tablespoons lemon juice
  • Mint leaves, to decorate (optional)

Directions

    For the pancakes: In a blender, process plantains, eggs, salt, oil, vanilla extract and Bisquick™. Blend until smooth.

    Heat a large frying pan on medium heat. To speed up the process, try to use a frying pan or griddle that’s large enough to fit 2 or 3 pancakes that are about 4 inches in diameter.

    Spread a little butter and pour the batter, repeat until you have 2 or 3 on the pan.

    Let cook for 3 minutes and flip when golden. Let cook on the other side for 2-3 minutes and then move to a plate.

    Repeat until have used all the batter.

    For the mango sauce: Blend mangoes and lemon juice in the blender. If the mangoes are not too sweet, you can add 1-2 teaspoons of sugar.

    Decorate with a few mint leaves, if desired.

    Serve pancakes warm and covered in mango sauce.

    For a different flavor, use almond extract instead of vanilla.

    You can use different kinds of fresh mango or canned mangoes if you can’t find fresh ones.
