Piloncillo Caramelized Carrots

Thanksgiving is coming up, and the turkey usually steals the spotlight. But I've always thought that side dishes are equally important. In my house, there's no Thanksgiving without stuffing, mashed potatoes, cranberry sauce or caramelized carrots. The latter are my husband's favorite; he's always asking for extra servings. And I don't blame him… they're so soft and delicious! Piloncillo really brings out the natural sweetness of carrots.

Ingredients

  • 2 lbs. carrots, peeled and cut into slices
  • 1 cup water
  • 1/4 cup butter
  • 1 piloncillo brick or cone

Directions

    In a medium-sized saucepan, cook the carrots in water at medium heat for 10 minutes.

    Add butter and piloncillo; cover the saucepan and reduce flame to low heat.

    Cook for an additional 10-15 minutes, stirring occasionally, until the carrots start to caramelize. Enjoy!

Expert Tips

    If you don't have piloncillo, you can replace with 1 cup of brown sugar.
