These Peruvian banana torrejas are very easy to prepare and you probably already have all the ingredients at home. These melt-in-your-mouth torrejas are golden on the outside and very spongy on the inside. If you’ve never had them, you’ll be surprised at how delicious they are. The best thing is that your little ones can help you prepare them. My kids love to help mash the bananas and stir them in the mixture, I like to serve my torrejas with honey, but you can serve them alone and they are also delicious.

Ingredients

  • 1 cup wheat flour
  • 2 tablespoons of sugar
  • 3 ripe bananas, smashed
  • 2 tablespoons water
  • 2 eggs
  • 1 tablespoon vegetable oil

Directions

    Mix the flour and sugar in a bowl.

    In another bowl combine the bananas, milk and eggs. Add dry ingredients to this mixture and stir.

    Heat up a frying pan and with a napkin spread the oil on the pan or use cooking spray.

    Pour three tablespoons of the mixture on the frying pan and with the back of the spoon spread it out.

    Leave it for 2 minutes or until the dough has bubbles; then turn it over.

    They can also be topped with sugar and ground cinnamon.
