Peanut Butter Balls

This recipe is perfect to make with your kids. It’s easy, delicious, and doesn’t require any cooking. Plus, it’s a fun way to add cereal to your children’s diets. I use Fiber One™ Protein (any variety will do) to give these treats the crunchy texture that I love. A few years ago, I read that crunchy foods are relaxing, and it must be the case for me because I love snacking on foods with great textures. These balls are creamy and sweet, and they look adorable when you place them in mini cupcake liners. They’re ideal to serve when your children have friends over, or for when you go camping. Because this recipe yields so many, you can keep them refrigerated and well sealed until you’re ready to serve them. Try them out and let me know how you liked them!

Ingredients

  • 1/2 cup peanut butter
  • 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 1 cup Fiber One™ Protein cereal
  • 1 cup chocolate chips
  • Silver nonpareils to decorate

Directions

    Line a tray with wax paper.

    Combine the peanut butter, sugar, milk and vanilla in a bowl. Mix well with a spatula or wooden spoon.

    Add the cereal and chocolate chips.

    Scoop out the mixture onto the tray by the teaspoon and refrigerate for a few minutes. When they’re cold, shape them into balls with your hands and place them in the small cupcake liners.

    Decorate each ball with a silver nonpareil.

    Serve, and enjoy!

    Use any kind of chocolate you like: white, milk or dark.

    The chips can be butterscotch to give your dish another layer of flavor.

    You can use almond butter instead of peanut butter.

    Store the balls in tins, dividing each layer with wax paper.
