All children love the deliciosa combination of peanut butter and jelly, but these PB&J sandwiches aren’t just for packing in the school lunch box. Prepared with slices of bolillo-a popular bread in Mexico similar to French baguette-and dipped in egg, these classic sandwiches are transformed into an exquisite French toast-like meal, perfect for breakfast with the kids.

Ingredients

  • 4 loaves of bolillo bread or french baguette
  • Peanut butter
  • Jam or jelly, of your favorite flavor
  • 6 eggs
  • 1/2 cup milk
  • 1/2 teaspoon ground cinnamon
  • A few tablespoons of butter, for cooking

Directions

    Slice the loaves of bread into 1/2-inch slices. Spread peanut butter on half of the slices, and on the other half add your favorite jelly. Form sandwiches by pairing the different halves together.

    In a large bowl mix the eggs, milk and ground cinnamon. Beat the mixture with a whisk or fork until the eggs are well incorporated.

    Melt a tablespoon of butter in a non-stick skillet over medium-high heat. Dip each PB&J sandwich into the egg mixture, checking that both sides are coated with egg.

    Cook the sandwiches in the skillet, adding more butter as necessary, until each side is golden brown.

    Serve the slices of PB&J torrejas drizzled with maple syrup or dusted with powdered sugar. Accompany with fresh fruit and enjoy!
