Peanut Butter and Jelly Burrito

Peanut butter and jelly sandwiches (a.k.a. PB&J) are the staple childhood sandwiches in the US. Kids eat it at home, take it in their lunchboxes to school and feel nostalgic about it when they grow up. Even though this famous sandwich is not very well known elsewhere, peanut butter lovers from any destination could appreciate the comforting sweetness and richness of this combination. I know I did the first time I tried it! The sandwich I had also included slices of banana and strawberries, and it quickly became my go-to breakfast when in a hurry. For this reason, I have decided to launch the PB&J sandwich in its Latin version: namely, turned into a burrito. Adding bananas and dried coconut to the basic peanut butter and peach jam recipe, I’ve brought some extra sweetness and Caribbean swagger into the preparation. Perhaps this will become the new kids’ favorite snack? Offer it to your children and let them decide!

Ingredients

  • 1 large whole wheat tortilla wrap, cut in half
  • 1/2 cup peanut butter
  • 1 banana, sliced
  • 1/4 cup dried coconut
  • 1/3 cup peach jam

Directions

    Turn the oven to 350°F, and heat the tortilla halves until warm, but not crunchy (you could also do this under the broiler).

    Spread the tortillas with peanut butter and jelly. Add a layer of bananas and sprinkle with the coconut. Wrap and serve.

Expert Tips

    You can use any jam you like, or just use fresh fruit in thin slices.

    You can also toast the tortillas a bit more, and have some PB&J tacos!

    If you’re allergic to nuts, replace the peanut butter with tahini (sesame paste), and you won’t have to miss out on this fun snack.
