Ingredients

  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, cut in halves
  • 1 cup mushrooms
  • 7 oz. noodles (spaghetti or any noodles you want)
  • 2 cups chicken or vegetable broth
  • Salt to taste
  • 1 cup spinach

Directions

    Heat the oil in a pan over medium heat.

    Add the tomatoes and mushrooms, and sauté them in oil to soften a bit.

    Mix the noodles in and cover with broth.

    Add salt to taste and cover the pan.

    When the noodles are almost ready and the liquid has evaporated, add the spinach.

    Serve hot with some parmesan cheese on top.
