Níspero Caipirinha

As you know, I love everything related to cooking. As an innovative chef that likes to experiment, I really enjoy preparing different drinks to impress my guests. One of my favorites is the caipirihna-the base recipe allows me to vary the ingredients in so many ways, each one uniquely complementing the original sabor of this cocktail. This national drink of Brazil is easy to prepare with few ingredients, but the results are irreplaceable with such a refreshing sabor. Using cachaça (fermented sugar-cane juice), sugar and lemon, this preparation can be modified to include fruit juices or other alcohol varieties. My own twist uses juice from the níspero-a marvelous fruit-with just enough sweetness to transport you to Eden!

Ingredients

  • 4 ozs cachaça
  • 8 ozs níspero juice, reserve the pulp if using fresh fruit
  • 2 lemons
  • 4 tablespoons white sugar
  • Plenty of ice
  • 2 lemon slices, to garnish

Directions

    First mix the cachaça with the níspero juice-if you have pulp leftover, add that as well. Let the mixture sit and infuse while preparing the other ingredients.

    Next, cut the lemons into eight slices (total). Take two short glasses, and then place four slices in the bottom of each glass.

    Over the lemon slices, add 2 tablespoons of sugar in each glass and press with a cocktail ‘muddler’ or pestle. This will crush the lemon slices and release their juice. Afterward, fill the glass with whole or crushed ice and add the infused liquor. Finally, stir each glass to blend the sabores.

    If you have a cocktail shaker, pour the contents of the glasses into the shaker and mix vigorously. Then return the mixture to the glasses and garnish with a slice of lemon placed on the rim of each glass. Salud!

    If cachaça liquor isn’t available, you can substitute it for white rum or caña blanca.

    Do you like your drink extra sour? Have some fresh squeezed lemon juice ready to adjust your drink as desired.
