Mini Veggie Frittatas

As my son gets older, his vegetable intake decreases. He's starting to make a "yuck" face at tomatoes and carrots, not to mention those dreaded greens. And since he's in school during the day, it's hard for me to control what he eats there. For him to enjoy his meals, and because he needs his daily vitamins, I've had to come up with creative ways to get him to eat more veggies. One of these recipes is his new favorite breakfast: my mini veggie frittatas. These individually sized meals are packed with a variety of vegetables, cheese and egg.

Ingredients

  • 8 eggs
  • 2 tablespoons milk
  • 1/4 cup onion, chopped
  • 1 tomato, chopped
  • 1/4 cup broccoli, chopped
  • 1/4 cup corn kernels

Directions

    Preheat oven to 375° F.

    Whisk eggs in a medium bowl. Add the milk and continue to whisk.

    Stir in the onions, tomatoes, broccoli and corn.

    Pour the mixture into the ramekins.

    Place the ramekins on a baking sheet and place in the oven.

    Bake for approximately 18-20 minutes or until frittata puffs and the center sets.

Expert Tips

  • tip 1
    Pack the frittata with all the green veggies your kids normally don't like to eat. This is a great way to get them to eat their vegetables. For adults you can add jalapeño for a spicy kick.
