Mexican fideo soup is, without a doubt, one of the easiest soups to make, but that doesn’t mean it’s not delicious and comforting. Many recipes start only with water and some vegetables, but I think it’s much start off with a nice broth to give your soup that extra flavor.

Ingredients

  • 2 cups peeled tomatoes, seedless and chopped into big pieces
  • 1/2 onion, chopped into big pieces
  • 2 garlic cloves, peeled and chopped
  • 6 cups chicken broth
  • 1 small carrot, diced (optional)
  • 1 tablespoon vegetable oil
  • 2 cups noodles or spaghetti
  • Salt and pepper
  • 1 cup cooked chicken, chopped into big pieces
  • Cilantro
  • Lemon wedges

Directions

    Using a food processor, chop the tomatoes, onion, and garlic until they’re chopped but not liquid. Put them in a pot along with the chicken broth and carrots, and take it to a boil. Cook for 15 – 20 minutes.

    In the meantime, heat the oil in a pan and brown the noodles slightly. Add them to the soup and cook them until they’re soft. Check the soup and season with salt and pepper.

    Add the chicken and serve into bowls, sprinkling some cilantro over them. Serve with lemon wedges so everyone can add lemon as they like.

    The basic soup doesn’t have carrots or chicken. You can skip them if you want.
