Mediterranean Guacamole

Guacamole is one of those dips that appeal to almost everyone. As a matter of fact, I don't think I’ve ever met anyone who didn’t like guacamole, and who wasn’t happy to dig into it as soon as it was placed on the table. Simple and wholesome, this all-natural avocado dip has given all other elaborate and mostly artificial spreads a run for their money, and has become ubiquitous in restaurants, houses, dinner parties and BBQs around the globe. I think it would be very hard to get tired of the originally tomato/Tabasco/ onion/ lemon flavor of guacamole, but just to be 100% sure that it never gets old, why not vary it a bit every now and then? Making some changes to the original recipe is easy and fun, like I’ll show you with this Mediterranean version. By adding a few staples of the Mediterranean diet, I’ve given this beloved creamy salsa a whole new flavor. I’ve also discovered a thing or two on the way, such as how well basil goes with it! If you don’t try new things, you will never find out how delightful they could be, so go ahead and be creative!

Ingredients

  • 3 large, ripe avocados
  • 1/4 cup chopped cherry tomatoes
  • 2 tablespoons capers
  • Salt and pepper
  • 1 lemon
  • 1 tablespoon olive oil
  • 1/4 cup chopped artichokes
  • 2 tablespoons chopped green olives
  • 2 tablespoons chopped roasted peppers
  • 2 tablespoons chopped basil

Directions

    Cut the avocados in half. Discard the seeds, peel, and put in a bowl. Mash with a ricer or a fork, until smooth (or chunky if you prefer it that way).

    Add all the other ingredients, and mix well.

    Serve with crackers, as a pre-dinner or lunch nibble.

Expert Tips

    For spicier guacamole, add a few drops of Tabasco, or your favorite fresh chili pepper.

    For a sturdier dip, add cubed feta cheese to the mix, or mash it together with the avocado.
  • tip 3
    Serve this with your favorite crackers, nachos, crudités, or French fries; as a topping for tacos, chili, or baked potatoes; or use it as a spread on your morning toasts.
