Mashed Maple Sweet Potatoes

Ingredients

  • 8 small unpeeled red garnet or dark-orange sweet potatoes (3 lb)
  • 3 tablespoons real or maple-flavored syrup
  • 1/4 cup butter or margarine, softened
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 2 tablespoons finely chopped pecans, toasted if desired

    In 4-quart Dutch oven, place sweet potatoes and enough water just to cover potatoes. Heat to boiling; reduce heat. Cover; simmer 20 to 25 minutes or until tender when pierced with a fork. Drain, peel (carefully) and set aside.

    In same pan, heat syrup and butter to boiling. Reduce heat to low. Add potatoes; mash potatoes with syrup mixture, using electric mixer on medium speed, until light and fluffy. Stir in salt and nutmeg. Sprinkle with pecans.
