During winter months, there’s nothing more comforting than enjoying hearty stews and soups. One of the more popular recipes in my family and one that always reminds me of winter, is lentil soup. This lentil dish goes great with a side of white rice or on its own. You can also make it a vegetarian dish by leaving out the chorizo or replacing it with soy chorizo.

Ingredients

  • 1 cup lentils
  • 2 tablespoons olive oil
  • 1 garlic clove, finely chopped
  • 1 carrot, diced
  • 1 chorizo, finely sliced
  • 3 cups water
  • 1 bay leaf
  • Salt, to taste

Directions

    Rinse the lentils and leave them soaking over night.

    In a pot on medium high heat, add oil, garlic, carrots, drained lentils and chorizo. Sauté for 5 minutes.

    Add enough water to cover lentils and add the bay leaf and salt. Cover with a lid and let cook on low heat for 20 minutes.

    Serve and enjoy.
