If you're looking for lunch to take to work, let me give you a recommendation. Besides salads and sandwiches, soups are another excellent option. All you need to buy is a couple of thermoses and that's where you'll store your soup. Lentils make a soup that is not only delicious, but will also leave you completely satisfied; it's so versatile that you can add practically anything. My Mexican family usually eats it with banana. If adding fruit isn't something you would like, try it with a bit of bacon. Better yet, add some jalapeños like in this recipe. It only takes 20 minutes and you’ll have lunch for a couple of days!

Ingredients

  • 1 tablespoon olive oil
  • 1 jalapeño pepper, seeded and chopped into thin slices
  • 1 grated carrot
  • 1/3 cup crushed tomatoes
  • 1 cup chicken broth
  • 2 cans (1 lb, 3 oz each) Progresso™ Vegetable Classics lentil soup
  • Sour cream (optional)

Directions

    Heat the olive oil in a deep pot. Add the pepper and fry, constantly moving for two minutes. Add the carrots and cook for 30 seconds, no more or it will burn.

    Pour in the crushed tomato and chicken broth, let boil. Add both cans of lentils, let boil at medium heat for 5 minutes.

    Serve with sour cream, if you like.

    Wash your hands right after chopping the jalapeños.

    If you want to add more veggies to the soup, I recommend adding spinach.
