I love sushi. Ever since I first tried it, I was won over by its texture and fabulous combinations. Although it origin is Japanese, it's a dish that invites us to be creative and mix ingredients beyond Asian cuisine. It occurred to me that Latin sushi can be created with tropical ingredients like plantains, mangos, avocados, queso fresco and even jalapenos. The result is quite literally mouthwatering. Give Latin sushi a try tonight!

Ingredients

  • 1 cup of sushi rice
  • 1 1/2 cup of water
  • 1/2 cup of rice vinegar
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of sugar
  • 1/2 mango cut into small cubes
  • 1/2 jalapeño
  • 3 sheets of nori seaweed
  • 1 fried plantain, julienned
  • 1 avocado, finely sliced
  • 4 fresh cheese, cut in strips

Directions

    Wash the rice thoroughly and place in a pot of water.

    Cook the rice, stirring softly with a wooden spoon.

    Cover the pot and lower the heat, cook until the grains of rice open completely.

    Mix the vinegar, salt, and sugar in a cup. Heat this mixture on the stove or in the microwave for a short period of time. Don't let boil; just heat enough so that the ingredients mix well.

    Transfer the rice to a container and add half of the vinegar mixture, salt, and sugar. Set the rest aside.

    Mix well and let cool.

    In the meantime, you can prepare the sauce. Mix the mango cubes with the jalapenos cut into very small chunks. Drench these ingredients with the rest of the rice vinegar mixture. Set the sauce aside until you're ready to serve.

    Place a nori sheet on a sushi mat and then add some rice. An easy way to do this is by forming a sphere the size of a tennis ball, place it in the middle of the mat and then flatten with a wooden spoon. Your fingers can also help when you are trying to flatten out the rice.

    Then place the strips of plantain, cheese and avocado on the layer of rice.

    Roll up with the help of the mat and squeeze until it's cylindrical in shape.

    Cut into slices and serve the sushi with the mango and jalapeno sauce.

Expert Tips

  • tip 1
    Moisten your hands and the wooden spoon before placing the rice on the nori sheets. This will help it not stick and be easier to handle.
