This is my new, lactose-free version of the traditional Puerto Rican coquito. The taste is lighter than the typical recipe, but I promise you that you'll be amazed its delicious taste. Prepare several bottles to present them to your friends, and while you’re at it, go ahead and surprise your family too!

Ingredients

  • 3 cups almond milk
  • 1 can (12 oz) coconut milk
  • 1 can (8.5 oz) coconut cream
  • 1 (6 oz) Yoplait® Lactose Free French Vanilla Low Fat Yogurt
  • 1 (6 oz) Yoplait® Lactose Free Strawberry Low Fat Yogurt
  • 1 teaspoon almond extract
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberries
  • 1/2 cup brown sugar
  • 1/2 cup gold rum

Directions

    Place all ingredients in a blender and blend until well mixed. Then pour in a glass jar or bottle and refrigerate for 2 hours.

    Serve cold with a pinch of cinnamon or nutmeg (optional).

Expert Tips

  • tip 1
    Use your preferred yogurt flavor. You can replace brown sugar with white sugar. You can also add more rum to the recipe.
