Ingredients

  • 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Original Biscuits (8 Count)
  • 3 tablespoons vegetable oil
  • 2 cups pico de gallo salsa
  • 8 pasteurized eggs*

Directions

    Heat oven to 375°F. In tortilla press, between 2 pieces of plastic (cut from food-storage bag, if desired) press each biscuit to 6 inches in diameter. Place biscuits on ungreased cookie sheet, 4 at a time. Bake about 10 minutes or until light brown on top. Cool 2 minutes on cookie sheet before removing to cooling rack.

    Meanwhile, to make salsa, in 10-inch nonstick skillet, heat 2 teaspoons of the oil over medium-high heat. Stir in pico de gallo. Cook about 5 minutes or until onions and tomatoes are tender. In blender, blend salsa mixture. Pour back into skillet to rewarm.

    In 10-inch nonstick skillet, heat remaining oil. Cook eggs sunny side up in oil; 2 at a time, separated (or use spatula to separate) and tilting pan slightly to spoon oil over egg whites only. If oil begins to spatter turn heat down slightly. To serve, place 1 egg and about 2 tablespoons salsa on each biscuit.

    *Pasteurized eggs are uncooked eggs that have been heat-treated to kill bacteria that can cause food poisoning and gastrointestinal distress. Because the eggs in this recipe are cooked sunny side up, be sure to use pasteurized eggs. They can be found in the dairy case at large supermarkets.
