In Mexico, tortas are a type of sandwich made with buns or bolillos. I’ve always believed that the best dishes can be turned into sandwiches, and huevos rancheros are no exception. Ingredients

  • 1 bolillo
  • 1/4 cup refried beans
  • 2 tablespoons manchego cheese, grated
  • 2 large eggs
  • 2 tablespoons spicy tomato sauce
  • Tomato slices, to taste
  • Red onion slices, to taste
  • Fresh cilantro, to taste

Directions

    Preheat oven to 425°F.

    Slice bolillo in half. Spread refried beans on both sides and sprinkle with grated cheese. Place the bread on a baking tray. Bake for 5 minutes or until the cheese melts; remove from oven.

    While the bread bakes, fry the eggs and season with salt and pepper. Add eggs on top of bread, add hot sauce, tomatoes, onions and fresh cilantro.

    Serve and enjoy!
