Hot Oatmeal with Cranberry Relish

Who hasn’t had oatmeal for breakfast once? Even though there are countless versions of breakfast, oatmeal is one of those early morning rituals that everyone has experienced. Personally, I like to switch between oatmeal, quinoa, and amaranth. All of these can be cooked similarly just with water and combined with my favorite toppings, such as nuts, seeds, fruit and honey. A few months ago during Thanksgiving, we went to visit a friend in New York just as she was preparing dinner. To accompany the turkey, she created a special cranberry sauce blended with walnuts, orange zest and juice. After tasting it, my friend saw just how much I liked it and gave me a full jar to take home. Over the following days I didn’t put anything on my breakfast oatmeal besides this deliciosa salsa! Aside from being tasty, I really enjoyed making this salsa as a healthy and exquisita way to incorporate fresh cranberries into my meals. As cranberries are such a nutritious fruit, they truly make a maravillosa accompaniment to any breakfast see for yourself!

Ingredients

  • 2 cups fresh cranberries
  • 1 cup walnuts
  • Zest and juice from one orange
  • 4 tablespoons raw honey
  • Cooked oatmeal, as desired

Directions

    Place the cranberries and walnuts into a food processor and blend until finely chopped.

    Transfer the finished mixture to a bowl and mix with the orange zest, juice and honey. Set aside.

    To serve, place four generous tablespoons of hot oatmeal in your favorite mug, accompanied by a few spoons of cranberry salsa on top.

    This salsa can be used for all kinds of dishes it originally was created to accompany a Thanksgiving turkey!

    The Thanksgiving version of this sauce uses sugar instead of honey, along with a touch of orange liqueur, but here I’ve stuck with just raw honey for this breakfast recipe.

    Any remaining sauce can be kept in a closed container and stored in the refrigerator for several days.
