A healthy alternative to the traditional tortilla, lettuce wraps burst with freshness and flavor. These guajillo Asian beef lettuce wraps are ideal for entertaining or for a family-style meal. No utensils required, kid-friendly, and do-it-yourself assembly! A flavorful balance of sweet (orange juice and honey) and heat (guajillo chile), these wraps are almost too pretty to eat.

Ingredients

  • 12 lettuce leaves (iceberg, romaine, Boston or green leaf)
  • 1 tablespoon vegetable oil
  • 1/2 red onion, diced
  • 2 garlic cloves, minced
  • 2 lbs ground beef
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup orange juice
  • 1 teaspoon honey
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon ground guajillo chile
  • 1 teaspoon rice vinegar
  • 1/2 cup shredded carrot
  • 1 medium cucumber, seeded and cut into matchsticks
  • Lime wedges

    Gently rinse lettuce leaves and pat dry, careful not to tear them. Set aside.

    In a large nonstick skillet, heat oil over high heat. Add red onion and garlic and cook for 3 minutes.

    Add ground beef and cook 5 minutes, breaking up with a spoon.

    Drain grease and return pan to stovetop; reduce heat to medium. Season with salt and pepper.

    Stir in orange juice, honey, soy sauce, sesame oil and ground guajillo chile.

    Cook until sauce has thickened, 3-4 minutes. Spoon beef mixture into lettuce leaves, add carrots and cucumber, and place on a large serving platter. Serve with lime wedges.

    Guajillo chile can be found in the spice aisle of your grocery store. You can substitute it for ground ancho chile or ground chipotle.
