Ingredients

  • 4 spoons of butter, divided
  • 3 cans (14.5 oz) of Green Beans, drained
  • 1 cans (15.25 oz) of corn, drained
  • 1 cup of onion, grated
  • 1 teaspoon of sugar
  • Salt and pepper
  • 1 cup of sour cream
  • 1 teaspoon of chipotle chili pepper
  • 2 spoons of tomatillo sauce
  • 2 cups of mozzarella cheese, grated

Directions

    Preheat the oven at 425° F.

    Melt 2 tablespoons of butter at medium heat in an ovenproof skillet. Add the green beans and the corn; stir-fry for 3 – 4 minutes. Set the green beans and corn aside in a separate plate.

    Place the two remaining tablespoons of butter in the same skillet. Add the onion and the sugar. Season with salt and pepper. Let it stir-fry until the onion is translucent and fragrant, about 2 – 3 minutes. Remove from the heat and add the sour cream, chipotle chili pepper and tomatillo sauce; stir until combined. Add the green beans and corn; stir until everything is covered in sauce. Add the mozzarella cheese.

    Bake for 15 -20 minutes, or until the cheese is melted.

    Drain the green beans and the corn so the casserole doesn’t have too much liquid in it.

    You can adapt the quantity of chipotle chili pepper according to how spicy you like in your food.
