Creamy avocados, mixed with fresh ingredients like garlic and citrus: Guacamole is irresistible! I grew up with a very traditional Mexican guacamole, but I love to play with my foods and fuse two different cultures. If I had to favor one cuisine besides Mexican food, it would most definitely be Greek. I love the flavors of the garlic, lemon, olives and oregano present in a lot of the dishes.

Ingredients

  • 1/2 cup red onion, finely diced
  • 4 tablespoons red wine vinegar
  • 1 packed cup fresh baby spinach sliced into ribbons
  • 1/2 cup roasted red peppers, diced
  • 1/3 cup pepperoncini peppers, minced
  • 1/3 cup kalamata olives, minced
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • 4 tablespoons lemon juice
  • 1 1/2 teaspoons crushed oregano
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/3 teaspoon pepper
  • 6 tablespoons olive oil
  • 4 avocados, mashed or diced
  • 1/2 cup feta cheese, crumbled
  • 4 pita bread, whole wheat or white

Directions

    Combine the red onions and red wine vinegar in a bowl. Stir well to combine and set aside.

    In a large bowl, combine the spinach, red peppers, pepperoncini peppers, olives, garlic, zest, lemon juice, oregano, red pepper flakes, salt, pepper, 2 tablespoons olive oil and avocados.

    Drain the red onions and add them to the guacamole. Stir well to combine; taste for salt. Cover with plastic wrap, pushing the plastic down until it makes contact with the guacamole. Set aside for 30 minutes.

    Preheat a nonstick pan to medium heat for 5 minutes. Brush both sides of the pita bread and toast in pan for 2 minutes per side or until crispy. Remove from heat and let cool. Slice into 8 wedges.

    Before serving, top the guacamole with crumbled feta cheese. Serve right away or keep covered with plastic wrap and chilled until ready to serve.

Expert Tips

  • tip 1
    To extend the shelf life of garlic, remove the skins from the cloves and transfer to container. Cover with olive oil, seal with a tight lid and store in refrigerator. Use in any recipes that require fresh garlic.
