Granola and Peanut Butter Balls

Morena Escardo Last month I worked at a summer camp teaching Spanish. Every morning, the children ate a quick snack at 11 am, which would sustain them until lunch at noon. Although I do not usually snack a lot between breakfast and lunch, since I always eat a nutritious and filling breakfast, seeing them eat them at this time awoke my appetite. As usual, I started to imagine quick and practical snacks that I could bring with me from home. One of my favorite snacks in the evenings is to eat peanut butter or almond butter with dark chocolate, and a little honey or dates to add a sweet touch. That's how these chocolate-dipped granola balls with honey and peanut butter were created.

Ingredients

  • 1/2 cup of granola
  • 1/4 cup peanut butter
  • 2 teaspoons honey
  • 3 squares of dark chocolate

Directions

    Mix the granola, the peanut butter and honey in a bowl using a spoon until everything is well combined.

    Create balls about 1/2 tablespoon using moist hands.

    Place the balls on a dish and freeze for 30 minutes.

    Add 1 inch of water to a small pot and let boil. Place a bowl on top of the pot.

    Add the chopped chocolate to the bowl to let it melt with the help of the steam. Stir until completely melted.

    Remove the balls from the freezer pass them through the melted chocolate one by one, covering the surface and transfer to a dish covered in aluminum foil or parchment paper.

    Freeze for 15 minutes.

Expert Tips

    These balls should remain refrigerated, especially over the summer. If you take them with you to work as a snack, refrigerate them as soon as you arrive.

    Place the balls in individual ramekins and place them next to each other instead of on top of each other to prevent them from sticking or falling apart.
