I like to make New Year's dinner at home, where I can gather my family and a few friends for a good time. I also like to plan for the party a few days before and prepare a few dishes in advance. This delicious dessert is very easy to make, but it takes time to prepare. However, you can prepare it a day in advance and take it out of the fridge a little before serving to decorate it and place it on your table. If you have trouble finding golden berries, you can use whatever fruit you like. Remember that celebrating the New Year shouldn’t mean stressing yourself out over dessert. Relax, enjoy and welcome 2014 in peace!

Ingredients

For the pastry:

  • 1/4 cup of milk
  • 1 tablespoon white vinegar
  • 3 eggs
  • 1 cup of sugar
  • 1 cup of flour
  • 2 teaspoons of baking powder
  • 1 pinch of salt
  • 1 tablespoon vanilla extract
  • 2 tablespoons granulated sugar

For the cream:

  • 3 tablespoons of sugar
  • 3 1/2 tablespoons cornstarch
  • 1 pinch of salt
  • 2 egg yolks
  • 2 cups of milk
  • 1 tablespoon vanilla extract

To decorate:

  • 1/4 cup confectioner's sugar
  • 2 cups whipped cream
  • 1 lb fresh golden berries
  • 3 tablespoons of golden berry or apricot jam

Directions

    For the roll: Preheat the oven to 450°F. Line a baking mold with greased parchment paper.

    Combine the milk with the vinegar and let sit at room temperature.

    With a mixer, whip the eggs with the cup of sugar until the volume is tripled.

    Meanwhile, sift the flour, the baking powder and salt. Lower the speed of the mixer and add these dry ingredients in three parts.

    Turn off the mixer and add the milk mixed with the vinegar, and the vanilla. Combine with a spatula and pour into the mold.

    Bake for 5 minutes.

    In the mean time, place a piece of parchment paper over a cooling rack and sprinkle with the two tablespoons of granulated sugar. When you take the cake out of the oven, flip it over onto the sheet with the sugar and immediately remove the sheet of paper you used to bake from the cake. Let cool completely.

    For the frosting: Combine the sugar, cornstarch, and salt in a pot.

    Aside, mix the yolks with the milk and add the dry ingredients. Cook over medium heat, stir constantly with a wooden spoon until the mixture thickens and looks smooth. The moment it begins to boil, turn off the heat and add the vanilla. Transfer to a different container and let cool.

    Once the mixture reaches room temperature you can frost the cake. Roll up like a Swiss roll with the help of the parchment paper you used to rest the cake on after baking. Transfer to a rectangular plate large enough for the roll.

    Cover with plastic wrap and refrigerate. You can leave the roll as is and leave in the fridge for a day.

    Remove the wrap before serving, sprinkle with powdered sugar. Spread whipped cream through the middle and lengthwise. Decorate with golden berries that have been cut in half.

    Serve immediately with more whipped cream if you wish.
