Goat Cheese Flan

Flan is one of those typical Spanish and Latin American desserts that lends itself to endless variations. This time, to change it up a little, instead of using homemade cheese I added creamy goat cheese with a touch of caramel.

Ingredients

  • 5 eggs
  • 6 oz of goat cheese
  • 1 can (12 oz) of evaporated milk
  • 1 tablespoon of white vanilla
  • 1 can (14 oz) of condensed milk
  • 1/4 sugar for the flan
  • 1 cup sugar for the caramel

Directions

    Preheat the oven to 350°F, 15 minutes before you start preparing your flan. Be sure to leave the bain-marie prepared with water. Place it in the middle rack of your oven.

    Prepare the caramel with 1 cup of sugar and 2 teaspoons of water. When its ready, pour into the mold you plan to use for the flan and let it cool while you prepare the flan mixture.

    In a blender, mix the eggs, goat cheese, evaporated milk, vanilla, condensed milk and 1/4 cup of sugar.

    Pour the mixture into the mold you used for your caramel and bake for 1 hour and 30 minutes.

    Let it cool on its own before moving it to your fridge. Refrigerate for 2 hours before serving and garnish with blueberries or dried fruit.
