Ingredients

  • 1 box (15 oz) Betty Crocker™ Gluten Free Yellow Cake Mix
  • 1/4 cup light butter with canola oil
  • 1/4 cup applesauce
  • 2 medium baking apples, peeled, finely chopped
  • 2 tablespoons granulated sugar
  • 2 tablespoons water
  • 1 teaspoon ground cinnamon
  • 2 packages (8 oz each) 1/3-less-fat cream cheese (Neufchâtel), softened
  • 1/4 cup packed brown sugar
  • 1 teaspoon gluten-free vanilla
  • 1/4 cup fat-free egg product
  • 1/3 cup chopped walnuts

Directions

    Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.

    In large bowl, place cake mix. With pastry blender or fork, cut in butter and applesauce until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumb mixture in bottom of pan. Bake 10 minutes.

    Meanwhile, in 10-inch skillet, cook apples, granulated sugar and water over medium heat about 10 minutes, stirring occasionally, until apples are tender. Stir in cinnamon; set aside.

    In separate large bowl, beat cream cheese, brown sugar, vanilla and egg product with electric mixer on medium speed until smooth.

    Spread cream cheese mixture evenly over partially baked crust. Spoon apple mixture evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.

    Bake 35 to 40 minutes longer or until light golden brown. Cool about 30 minutes. Refrigerate to chill, about 2 hours. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.
