Ingredients

Orange-Ginger Mayonnaise

  • 1/2 cup mayonnaise or salad dressing
  • 2 tablespoons frozen orange juice concentrate, thawed
  • 1 tablespoon finely chopped gingerroot
  • 2 teaspoons grated orange peel

Scallops

  • 2 tablespoons olive or vegetable oil
  • 2 cloves garlic, finely chopped
  • 1 tablespoon finely chopped gingerroot
  • 1 1/2 pounds fresh bay scallops
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 2 tablespoons finely chopped fresh mint leaves
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon grated orange peel

    Make Orange-Ginger Mayonnaise. Cover and refrigerate until serving.

    Heat oil in 12-inch nonstick skillet over medium heat. Cook garlic and gingerroot in oil 1 minute, stirring frequently. Add scallops; sprinkle with salt and pepper. Cook 2 to 4 minutes, stirring frequently, until scallops are white.

    Transfer scallops to serving bowl using slotted spoon. Add mint, parsley and orange peel; toss to coat. Serve with toothpicks or cocktail forks and Orange-Ginger Mayonnaise.

Expert Tips

  • tip 1
    If the small bay scallops are not available, you can use sea scallops. Just cut them into smaller pieces before cooking.
  • tip 2
    Although the scallops are best if cooked just before serving, the mayonnaise mixture can be made and stored in the refrigerator up to 24 hours in advance.

    Garnish the bowl with fresh orange slice twists and fresh mint sprigs.
