Erica Dinho When I want to prepare a salad for friends or family, I always try to get creative, so they don't get bored with the classic lettuce-tomato-onion combination. Today I want to share this arugula, pear, fig and prosciutto salad. It has a wonderful selection of colors, flavors and textures. You’re going to love it!

Ingredients

  • 1/2 lb arugula
  • 6 fresh figs (ripe, but firm and cut into pieces)
  • 4 ripe pears, peeled and sliced
  • 8 thin strips prosciutto
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • Pepper to taste

Directions

    Place the arugula, figs, pears and prosciutto in a salad bowl or large plate.

    In a small bowl, combine the vinegar, olive oil and pepper. Mix well.

    Add the vinaigrette to the salad and serve immediately.

    This salad may be prepared ahead of time, but do not add the pears and vinaigrette until ready to serve.
