Eggplant Sticks

Of all the recipes for baked sticks, the ones made from eggplant and sweet potato are definitely my favorites. Eggplant sticks are delicious when served with any dish or menu, be it hamburgers or a formal meal. They can also be a great appetizer or hors d'oeuvres when served with a sauce. And they are perfect to get the kids to eat their vegetables in a delicious, wholesome, easy way. You can easily make these sticks in the fryer but I chose to bake them for a lighter version that's equally delicious.

Ingredients

  • 1 cup flour
  • 1/8 teaspoon cayenne pepper
  • 1 cup whole organic milk
  • 3 beaten eggs
  • 2 cups fresh bread crumbs
  • 3 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 large eggplants, peeled and cut into 1/2-inch sticks
  • Sea salt and pepper, to taste

Directions

    Preheat oven to 425°F.

    Lightly coat a pan with oil and set aside.

    Combine dry ingredients in a bowl, except bread crumbs and spices, stirring well.

    Combine all wet ingredients in a separate bowl, stirring well.

    Use a third bowl to combine bread crumbs, oregano and basil.

    Coat eggplant sticks in flour, then in the egg and milk mixture, and finally in the bread crumbs.

    Place eggplant sticks on the baking pan, don't stack them.

    Bake for 15 minutes, flip and bake for another 10-15 minutes or until golden.

    Season with salt and pepper, serve immediately with sauce of your choice.

    If you have any leftovers, freeze them and reheat in oven before serving.
