Easy Peach Cookies

Oriana Romero One of my favorite things is to eat cookies with a fresh cup of coffee… mmm! The truth is that I'm a huge cookie fanatic, even more so when they're homemade. My kids have also learned to enjoy cookies with milk just like their mother. So, now when I make cookies I like to add fruits or nuts too. This time I added peaches because, as you know, they're in season and you can find them everywhere at very good prices. They were delicious! Enjoy!

Ingredients

  • 2 cups of Gold Medal™ all-purpose flour
  • 1 pinch of salt
  • 1/4 teaspoons of baking soda
  • 8 tablespoons (1 bar) of butter at room temperature
  • 3/4 cups of sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 large peach, washed, peeled and cut into small pieces

Directions

    Preheat the oven to 375°F. Line a cookie sheet with parchment paper.

    Combine the flour, salt and baking soda in a medium bowl. Set aside.

    Whip the butter with a hand mixer at medium speed for 5 minutes or until it is creamy and pale in color. Add the sugar and continue whipping for 5 more minutes. Add the egg and vanilla extract, whip until well combined.

    Set the speed to low and add the flour little by little. At the end you’ll have a compact, but soft dough.

    Create balls the size of a walnut and place on the tray.

    Add a piece of melon to each ball and apply light pressure.

    Bake for 15 minutes until the lower borders have browned. Remove from the oven and let cool completely on a rack.

Expert Tips

  • tip 1
    If you want to have the cookies to have more of a peach flavor, add 2-3 drops of peach extract.
