Easy Eggs with Salsa and Tortilla Chips

A few years ago my husband and I visited some Mexican friends, and they prepared this delicious dish with eggs, sauce and tortilla chips. My husband, who is an egg enthusiast, loved it and since then I have prepared the dish for him on a regular basis. What I most love about this recipe is how easy it is to prepare, it calls for just a few ingredients, and in a matter of minutes you’re ready to serve a complete and delicious meal. If desired, garnish with queso fresco to make this egg dish egg-stra irresistible! Enjoy!

Ingredients

  • 2 teaspoons vegetable oil
  • 1 cup onion, diced
  • 1 cup tomatoes, diced
  • 1 jalapeño, deveined and deseeded, diced
  • 1 cup salsa
  • 6 corn tortillas, cut in fourths and lightly fried
  • 4 eggs
  • Salt and freshly ground pepper, to taste (optional)
  • Cilantro, to taste (optional)

Directions

    Preheat the oven to 400 °F.

    In an oven-safe frying pan, heat the oil over medium heat. Add the onion, tomatoes and jalapeño and stir-fry until the onion is translucent, for about 3-4 minutes. Add the salsa and mix to combine. Add the fried corn tortillas and carefully mix until all the tortillas are covered with the sauce.

    Crack the 4 eggs over the tortillas and sauce. Season with salt and pepper to taste, if desired.

    Bake until the eggs have been cooked to desired doneness.

    Garnish with the cilantro leaves, if desired. Serve immediately.

Expert Tips

  • tip 1
    To fry the tortillas, add a little oil to a frying pan and heat over medium heat. Fry in batches until lightly golden brown. Remove from oil and set on paper towel to absorb excess oil.
