This Aztec soup made with ground beef is flavorful and super easy to make. Arrange the garnish in a dish so the kids can be personalize their dish to their liking. The best thing about this soup is that you’ll save time in the kitchen, and be left with more time for family!

Ingredients

To prepare the soup:

  • 2 tablespoons olive oil
  • 1/2 medium-sized onion, finely chopped
  • 1 serrano chili pepper, finely chopped
  • 1 garlic clove, chopped
  • 1 lb ground beef
  • Salt and pepper, to taste
  • 2 cups pinto beans, drained
  • 2 cups enchilada sauce
  • 1 (8 oz) can tomato paste
  • 4 cups chicken or beef broth

To prepare the garnish:

  • Sour cream, to taste
  • Cheddar cheese, shredded, to taste
  • Chopped tomato, to taste
  • Chopped onion, to taste
  • Fresh cilantro, finely chopped
  • Tortilla chips, to taste

Directions

    Heat the vegetable oil in a pan over high heat.

    Sauté the onion and chili pepper for 2-3 minutes until the onion is translucent. Add the garlic and ground beef and let cook for 8-10 minutes, until the meat is completely cooked. Season with salt and pepper, to taste.

    Add the pinto beans, red enchilada sauce, tomato paste, and chicken or beef broth. Cover and let cook over high heat for about 5 minutes until boiling. Reduce to low heat and cook for an additional 10 minutes. Remove from heat.

    Serve the soup in bowls and garnish with sour cream, shredded cheese, tomato, onion and chopped for a cilantro. Pair with tortilla chips. Enjoy!
