Easy and flavorful, what is not to like about this soup?

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup white onion, finely chopped
  • 2 poblano chiles, charred, peeled, stemmed, seeded and diced
  • 2 cans (19 oz each) Progresso™ Vegetable Classics hearty tomato soup
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 2 tablespoons sour cream
  • 1/4 cup crumbled queso fresco

Directions

    In 3-quart saucepan, heat vegetable oil over medium-high heat. Stir in onion; cook 2 to 3 minutes, stirring frequently, until light brown. Add chiles; cook 1 minute. Stir in soup and broth. Reduce heat to medium; cover and cook 5 minutes.

    Serve soup in individual plates with a teaspoon of sour cream and 2 teaspoons queso fresco.
