Cucumbers are one of the ingredients my body craves during hot summer days. Their freshness and water content make cucumbers the perfect touch for summer salads or juices. You can even apply cucumber slices on your sunburnt body! Today I’ll share with you a pappardelle recipe including this refreshing and nutritional ingredient.

Ingredients

  • 1 large cucumber
  • 1/2 pack smoked salmon, chopped
  • 2 tablespoons capers
  • Salt and pepper, to taste
  • 2 cups chopped dill
  • 1/2 cup natural yoghurt
  • 1-2 teaspoons honey

Directions

    Rinse the cucumber. Peel it if it’s not organic (you don’t need to if it is). Cut it in thin slices with a vegetable cutter.

    Mix the honey with yogurt until smooth.

    Add capers, salmon, dill, salt and pepper to your cucumber and mix well.

    Pour the yogurt and mix so that all the ingredients are covered in this sauce.

    Serve as a cold entrée or a side dish.

    You can replace the cucumber with zuchinni or use traditional pappardelles.
